Tasting Notes: The 2008 Cave B Cabernet Sauvignon starts off with big earthy notes. Well worn leather and English breakfast tea lead the way to spicy aromas of anise seed and cardamom. Then comes the rich fruity essences of cassis, blackberry jam and dried figs. The ending impression on the nose is one of light oak aromas laced with vanilla. The palate begins big robust and spicy, with the cardamom from the nose being joined by a bit of cinnamon. Then the impression of the leather and tea come into play. Cassis and blackberry jam are accompanied by a bit of dried plum on the palate, then bittersweet chocolate comes in before this big structured wine leaves you with a hint of vanilla on the finish. The wonderfully cool growing season of the 2008 vintage have dealt this wine a good hand for age ability with a beautiful balance of structure and acidity this wine should cellar well through 2016. Serve this wine with a nice juicy steak, braised red meat, or even gourmet burgers.
