Tasting Notes: Dried cranberries start the developed nose of this 2008 vintage of Cave B Merlot. All of the aromas on the nose play nicely together to create a rich complex bouquet. After the cranberries, cherry fruit leather, quince paste, and a bit of spicy tobacco leaf aromas conclude with a sweet hint of cedar. The palate is equally rich starting with earthy flavors of tobacco and sweet cedar. Red licorice flows into hints of juniper berry and bakers cocoa the lovely palate concludes with just a touch of elegant smokiness from the oak barrel ageing. The 2008 Cave B Merlot has a beautiful balance of structure and acidity that will lend it a good cellar life. This wine should cellar well through 2015, and will pair nicely with beef stew in agrodolce sauce.
