Tasting Notes: The late fall and early winter of 2008 brought us some of the coldest temperatures on record for this time of year and as a result we were able to bring to you our third vintage of Cave B Ice. With a temperature of 6˚ F at harvest tasting these little frozen grapes was much like having a little bite of Semillon sorbet perfectly wrapped in a grape skin. Baked pears lead the way through the beautiful bouquet of fruit aromas in this wonderfully complex and rich dessert wine. Ripe stone fruit essences of apricot jam, nectarines and the best summer peaches you have ever had give way to a tiny hint of nutmeg and cinnamon spice before the tropical crescendo of papaya, mango and a kiss of passion fruit make your mouth water for that first sip. All of those wonderful aromas explode on your palate with all of the fruit flavours jumping around and taking turns on your taste buds. The tropical notes and spice flavours trade back and forth as the lingering finish leaves you with a hint of nutmeg laced mango. Enjoy this special wine chilled well and paired with a fruit based dessert or drizzled over vanilla bean ice cream and your favorite summer fruit.
