Our Cave B Cuvee du Soleil (Blend of the sun) is always one of my favorite wines to blend. It represents some of the best of what we have in our cellar. I literally taste through every single barrel of our Bordeaux red wines multiple times selecting barrels that are perfectly matched to make a mouth-filling red wine blend. As I taste through I’m looking for barrels with particular attributes that will contribute to the wine as a whole. Some barrels may have a tremendous mid-palate while others have a beautiful extended finish etc. only about 5% of the wine that we produce at Cave B makes it into the Cuvee du Soleil program. The 2011 Cuvee greets you with aromas of dried plums and wild huckleberries. There are hints of vanilla, with light floral notes that round out the delicious nose of this cool vintage red blend. On the palate there is a beautiful expression of well integrated oak that gives depth and dimension to flavors of roasted chestnuts, ripe plums, and wild huckleberries. This wine will age tremendously well and although I think it is drinking nicely right now I believe it will peak in 6 – 7 years. If you are a fan of collecting wine to age this wine will most definitely not disappoint, I’m certainly going to be setting aside a number of bottles for myself. I love braised short ribs and this wine is a natural for pairing with hearty red meats. A nice grilled Rib eye steak topped with Gorgonzola cheese cracked black pepper and sweet caramelized onions would be amazing with it as well. Production : 314 cases
