Although the cool vintage of 2012 was challenging for some I am truly enjoying the lean food friendly wines that have resulted from the vintage. The 2012 Cabernet Sauvignon is no exception. The nose commences with an earthy note of roasted chestnuts that moves into undertones of leather. The fruit on the nose consists of wild huckleberries, pie cherries and pomegranate juice. The palate is also a bit more austere in nature than a warm vintage Bordeaux varietal. Again the chestnuts kick things off moving into all of the other components encountered on the nose. The addition of juniper berries and a hint of red licorice add to the well rounded palate of the 2012 Cabernet Sauvignon. Our 2012 Cab will pair tremendously well with braised short ribs drizzled with juniper berry infused Demi-Glace. Add some pan roasted wild mushrooms and we’re talking “Awesome dinner”!!!!520 cases produced.
