Although Cabernet Franc has been traditionally used only as a blending variety to enhance Cabernet Sauvignon and sometimes Merlot, we love the merits of this variety all on its own. It has a unique character that offers many great food pairing options which won’t work with some bigger red wines.
Aroma: Blueberries are my first impression as I raise the glass to my nose. Quick on its heels are notes of cocoa powder and nutmeg. Spiced cranberry sauce rounds out the nose of this beautifully aromatic red.
Taste: The palate has a wonderful medium bodied texture, with a luscious mid-palate. Flavors of ripe blueberries move into the earthy dimensions of the wine, with the nutmeg spiced cranberry flavors and cocoa hanging out on the lingering finish.
Food Pairing: I’m thinking pork tenderloin marinated in a smoked paprika infused Harissa marinade and grilled to perfection. Slice into medallions and drizzle a little more Harissa. Yum, Yum!!
