At first pour the 2015 Cave B Blanc de Blanc shows itself with authority. There is a thick creamy mousse in the glass as the Sparkler is slowly poured which takes its time to dissipate. Aromas on the nose are of sliced green apples lying on top of yeast dough ready to go into the oven. There is a hint of unripe nectarine and just a whisper of lime zest that elevate the bouquet of our 2016 Blanc de Blanc.
The palate offers a delicious bevy of flavors there is a crispness of Granny Smith apples, along with essences of nectarine, apricot, citrus zest, and Asian pear along with those rich flavors of yeast dough that add a nice density to the palate.
The 2016 Blanc de Blanc will be a great partner with oysters on the half shell. If you’re not into shellfish, dried fruit and cheeses are also good mates for this sparkling wine as well as truffled popcorn or even kettle cooked potato chips for a little more of an unconventional sparkling wine pairing.
