Sangiovese is a wine that is not widely produced in our state. It’s a wine that is sometimes misunderstood because it is lighter in body color and texture than most red wines but it is supposed to be lighter, because that is the nature of the grape. Here at Cave B Estate Winery we love our Sangiovese because the wine shows true varietal character, which is something I am always trying to achieve in each of our wines.
Aroma: The nose initiates with earthy aromas of leaf tobacco along with some herbal notes expressing hints of marjoram and sage. It then leads into sweeter notes of macerated raspberries, vanilla and a hint of anise.
Taste: The palate seems to follow the exact sequence of flavors as the aromas found on the nose with that hint of anise lingering on the palate when you swallow the wine.
Food Pairing: I think this wine will pair nicely with game bird like roasted squab or quail. It will also do really well with roasted root vegetables served over a hearty polenta.
