Our Cuvee de Soleil (Blend of the Sun) is a true gem in our wine line up. This wine is always one of the most fun wines to develop the blend for, as it is a true “barrel select” type of wine. I taste through every single one of our Bordeaux red varieties and narrow down the selection to come up with the best of the best for this blend.
Aroma: The nose makes a tremendous impression right away with complex aromas that are both dense and bright all at once. I get dense notes of dried plums, dark berry jam and pipe tobacco backed with bright aromas of ripe raspberries and cherries with hints of vanilla.
Taste: The palate follows right along with the nose offering that same complexity of dense and bright. It’s is so incredibly balanced in flavor that it is difficult to tell when one flavor ends and the next begins, as they seem to take turns tagging in making your taste buds happy.J This vintage of our Cuvee du Soleil has a long persistent finish that continues to please the palate long after you’ve swallowed the last sip.
Food Pairing: There are so many foods I want to pair this wine with, grilled squab, braised lamb shank, braised short ribs, and a bevy of others. Let’s go traditional and go with a bacon wrapped Filet Mignon served over creamy mashed potatoes and covered with a rich sauce.
