The 2016 version of our Semillon expresses some really beautiful aromatics. Fresh apricots lead the way moving into vanilla bean, and baked apples. There are also hints of fresh cut pineapple and a wisp of nutmeg to round out the beautiful aromas in the glass. The palate of our 2016 Semillon is both light and delicately complex all at once. Baked apples and pineapple lead the palate rather than apricots, the apricots come in later and hint at dried apricots on the palate rather than the fresh apricots encountered on the nose.
Our Barrel fermented Semillon will pair with a wide range of foods. A beautiful marriage would pair this wine with pan seared halibut drizzled with an apricot and Semillon reduction, served over delicate hand-made pasta, tossed with brown butter and sage.
