Ever since we bottled our first Viognier, from the 2007 vintage, this wine has been beautifully consistent and delicious. Back then we barreled aged this wine but now we ferment and age our Viognier in stainless steel tank creating a different but gorgeous style from that first go. Honeysuckle flowers are the intro to the lovely aromatic profile of this wine. Honeydew melon, fresh nectarine and Asian pears compliment the floral notes perfectly. As you taste the wine the Honeydew melon is eager to be first in line with the flavors of Asian pear pushing their way in and making a melon, pear mash up of flavors. As you swallow the wine the flavors of nectarine hang back and enjoy sticking around for a lovely finish, arm in arm with the perfectly balanced acidity.
The 2016 Viognier is perfectly suited for a lovely spring salad with Citrus Supremes, and shaved Manchego cheese, dressed with a verjus vinaigrette. You can also go the totally opposite spectrum of flavors and go with a rockfish taco dressed with avocado, Mexican Crema Fresca and tomatillo salsa.
